If you’re like us, we love a good fried crispy shrimp! So crispy we call em scramps. They make a perfect snack, addition to a quick lunch and best of all, it’s super fast. Here’s a recipe for our crunchy pop’n scramps.
1 pound raw shrimp, peeled and deveined with the tails attached
1/2 cup flour 2 eggs lightly beaten
1 1/2 cups panko bread crumbs
1/2 teaspoon salt
1/2 teaspoon lemon pepper
1/2 teaspoon of cumin
1/4 teaspoon black pepper
1/4 teaspoon garlic powder vegetable oil or canola oil for frying
2 cloves of garlic crushed
2 tbsp chopped culantro
lemon slices for garnish
Use paper towels to pat the shrimp dry.
Toss the shrimp with salt, black pepper and garlic powder.
Gather three shallow dishes. In one pan, add 1/2 cup flour and add lemon pepper and cumin. In another pan add 2 eggs, lightly beaten and add culantro. In the third pan add 1 and 1/2 cups panko bread crumbs. Dip each shrimp in flour, then egg, then panko bread crumbs. Use your fingers to press the bread crumbs onto each piece of shrimp. Heat about two inches of canola or vegetable oil in a deep pot to around 350 degrees. Deep-fry the shrimp in batches, frying about 6 shrimp at a time. The shrimp will cook very quickly! When they are golden brown, use a slotted spoon to remove them from the pan, and transfer them to a paper towel lined plate. Continue cooking the shrimp in batches until all shrimp are fried and golden brown. Serve with lemon slices and/or cocktail sauce. Also enjoy with rice, or a healthy wrap.
So in case you’ve been under a rock, Kendrick Lamar delivered a fire packed high-energy performance at last nights 58th annual Grammy Awards.
After being nominated 11 times in nine categories, the California rapper’s heavy presence at the annual awards show felt like a meaningful boost for rap itself, the genre that Grammy voters snub the hardest year after year.
But tradition prevailed. Lamar’s intensely politicized “To Pimp a Butterfly” lost the award for album of the year to Taylor Swift’s indomitable best-seller “1989,” even though he walked away with 5 awards sweeping the rap categories. Congrats Kendrick – that performance was pure 🔥🔥🔥🔥🔥
Taylor Swift took album of the year and proceeded her acceptance with questionable but well valid shade directed towards Yeezy. Swift’s acceptance speech
“As the first woman to win album of the year at the Grammys twice, I want to say to all the young women out there: there are going to be people along the way who will try to undercut your success or take credit for your accomplishments or your fame,” Swift said near the close of the show.
“But if you just focus on the work and you don’t let those people sidetrack you, someday when you get where you’re going. You’ll look around and you’ll know it was you and the people who love you who put you there and that will be the greatest feeling in the world.”
You go gurl!!! We see you!
Who we didn’t see Rihanna? Ms Fenty was under the weather and unable to perform due to doctor’s orders. Put down the joint gurl!
